I hope you're doing well. Strange coincidence in that I just got off the phone with Rod Milton and was mentioning to him that I'm planning to check in with Dale Janzen this week. Then, I went to check Cookthink stats (as I do every morning) and saw a couple referral links from She Spills the Beans. Are you still with CTFA?

I am new to your site, and I see that this posting was written over a year ago, but I thought I'd share one thing that helps me.
Whenever I cook, I throw a 2-3 serving portion into the freezer. It's great for stew, refried beans or rice.
On Sundays, I'll take out one container and let it thaw. By Monday night, it's as easy as scooping what I need into a bowl and throwing into the microwave.
If I forget, and need to thaw it in the microwave, it only takes about 5-7 minutes.
